    We had a backyard barbeque for my daughter's first birthday party, and this was one of the salads I made. It was a HUGE hit - in fact, everyone wanted a copy of the recipe. I used grilled corn to enhance the flavor and let it sit with the dressing for almost two hours. Needless to say, it will be on the top of my list at the next family event!

    This recipe is amazing! I have made it a couple times and it definitely tastes better after sitting for a while. I like it best after a full day in the fridge. I can not wait to take to a picnic this weekend!

    Summer on a plate (veggie style! I love this recipe. I cut the corn using a technique Rachael Ray used on one of her shows - placing the corn on a cup/bowl within a larger bowl and I think it helps to minimize the potential mess.

    Grilled the corn so it was crunchy done with a little char and smoky flavor. We also used Balsamic vinegar instead of the white vinegar and added about a tablespoon of dijon mustard to the dressing to emulsify it well. Last change... if you don't want to cube the mozzarella use the smallest balls of fresh mozzarella (Ciliegine. Open them, pour off the water, rinse in cool water and then mix them in. Easy! It was the most eaten dish at our BBQ with 30 people in attendance....both as a snack and as a part of the meal. Thanks FNK!

    Delicious! I used a bag of frozen sweet corn, and added 4 cloves of garlic. YUM. I made this salad twice in one week, it's that delicious. I really love how simple it is. And it's versatile as well. You can add anything you want to it and it would still be yummy. I'm considering adding black beans but it's almost so good I don't want to ruin it!

    Wow.......this was sooooo good!! I used a few more tomatoes and added about a teaspoon of sugar to the oil and vinegar. In any case, this is a keeper of a recipe........a spoonful of SUMMER for sure! Still thinking about it, YUM :D

    This is so yummy!!! It is perfect for a picnic or a BBQ! It reminds me of Caprese salad with the addition of sweetness from the corn. I followed the recipe exactly with the exception of only using 4 ears of corn instead of six. I will probably continue only using 4ears since I think that there would not be enough other ingredients to balance out the dish.

    I made this corn salad for Thanksgiving last year and everyone in my family loved it! As soon as it was passed around the table it was gone!! This year I'll have to make 2 batches to satisfy everyone. It's easy to make and great for Thanksgiving because it is so fresh. It's really delicious and I just love it!
