Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon allspice
- 1/2 teaspoon salt
- 2 tablespoons cold unsalted butter
- 2 tablespoons cold vegetable shortening
- 1 egg, beaten
- 1 cup buttermilk
- 1/4 cup dried figs
- 1/4 cup dried cranberries
- 1/4 cup toasted walnuts
Directions
Preheat the oven to 375 degrees.
In a large bowl, combine the flour, baking powder, baking soda, allspice and salt and mix well. Cut the butter and shortening into small pieces and add to the flour mixture. Using your fingers, work the cold butter and shortening into the flour mixture until it resembles coarse crumbs. Add the egg, the buttermilk, the dried fruit and the walnuts and mix into the flour mixture until it is incorporated. Turn the dough out onto a floured surface and knead gently until the dough forms a smooth ball. Shape the dough into a round loaf. Place the dough onto a lightly oiled baking sheet. Score the top of the loaf with a very sharp knife. Place the loaf in the oven and bake for 40 to 45 minutes or until golden brown.

I've made this twice, and each time I've played around with different dried fruits. I always add raisins, but I'd also used figs, cranberries, and apricots. I love this recipe - it comes out very moist and I didn't find it tough to work with the dough.

I usually never follow any recipe directly. I use currants instead of the figs and I used all butter instead of shortening. Turned out great though and I too found that 30-35 min was plenty of baking time.
If you don't like soda bread you won't like it.
