Absolutely delicious! Instant family favorite, will definitely be making this again. We didn't have ground ginger so I substituted cinnamon and it worked out just fine. A word of warning though, I found these cookies burn easily so keep an eye on them and remove them when they are just starting to brown around the edges.

This is my 4th year making these cookies for Christmas. They are a huge hit with friends and family. We like them crisp with a small bowl of vanilla or lemon ice cream, yum! I follow the directions exactly but leave in the refridgerator until I need a batch. I slice thin as you can and have the dough stay together.(maybe 1/8" It makes about twice as many cookies and they have an extra light and crispy taste. Not as much quilt enjoying a few.

These cookies were great because they were easy to make and came out really crispy, as most cookie recipes seem to be for soft cookies, so if you like a crispy cookie they are good, but I was disappointed with the flavour, I added a little extra ginger but I actually couldn't taste ginger in the finished cookie at all, next time I would add way more ginger or perhaps some chopped stem ginger for a little extra kick!

These are a very nice, crisp cookie with delicious delicate flavor. Easy to put together as long as you think ahead and allow for chilling time. I followed recipe exactly except I used old-fashioned oats, not quick-cooking, which worked fine. Also, I chilled overnight. Be sure to leave enough room between cookies on the cookie sheet - they do spread a little. They are EXQUISITE shortly after coming out of the oven - crispy on the outside, soft and chewy on the inside. Unfortunately, they crisp up quite a bit as they cool and become crunchy all the way through. My family are die hard soft cookie fans, so I will try baking a little less to see if I can get that just out of the oven texture to stay around a bit longer. If so, this will become a staple at my house! If not, it is certainly a good solid recipe for a delicious crispy cookie, if that is what you're looking for.
