I've made this recipe for years and it's always been a HUGE hit! I can't tell you how many times I've been asked for the recipe.
The one substitution we've made started the first year and we have made the same "mistake" every year since. I suffered a cooking-related injury the night before Thanksgiving which resulted in my mom being pressed into service helping me finish dinner (she's not quite the foodie I am..._.
We roasted the shallots as instructed but also roasted an entire head of garlic at the same time which was intended for the mashed potatoes. My mom ended up putting the entire roasted head of garlic in the green beans instead and they were AMAZING! I usually make a little extra sauce just because I tend to buy too many mushrooms. The breadcrumbs aren't really necessary, I've left them out many times and just browned the top of the yummy creamy sauce. Enjoy!

I was looking for a healthier (and tastier way to update the old classic and I was very pleased with the result. A delicious dish!

Not sure what it needs but it wasn't my families favorite. We like to try new things from time to time but I'm sad to say, we will not have this one again. Any suggestions are welcome!!

I love this casserole. I have cooked it the last two years for my dish at Thanksgiving and it is a big hit. I am not a big fan of the green beans coated in cream of mushroom soup and topped with fried onions....this is so different. There is such a homemade taste to the creamy broth in the green beans. I was not able to buy fresh green beans, so I used frozen green beans that I boiled for about 20 minutes. I hope you enjoy this as much as I do.
