Directions
Trim 4 bunches of scallions and toss with 3 tablespoons olive oil, 1 teaspoon salt and a pinch of cayenne. Grill until charred and beginning to wilt, about 5 minutes. Drizzle with lime juice and more olive oil and serve with lime wedges.

We love this. Every time we BBQ, we make this. The scallions are a nice refreshing side. Be careful, because they will burn if you don't watch them because of the oil in the marinade.
I have also tossed them in a bag with the olive oil, salt, cayenne pepper & lime & added other vegi's to all marinate together & BBQ'd them in a foil pouch. Everyone loves this.
