It is critical that you rinse the potato after you slice it, otherwise the slices get stuck together because of the starch. Trust me, I forgot to do this and basically got a baked potato, no pretty crip slices. :(

This recipe for "Hasselback Sweet Potatoes" please's me to use as a 'Special Treat' for a Holiday Dinner! I've used Sour Cream in place of the Yogurt after the baking is done. The 'Fans' open out to offer you the flavored 'petals' to enjoy in this simple recipe! [It can be done just as well in white potatoes or even Yellow Gold with a touch of white and still cut the Hasselback cross slices-it;s very tasty.] These are simple as Baked Potatoes - with a masterful handle for each potato to bake with the fanciful Hasselback 1/8th." slices to create the amazing look! :-
