This soup was very good we omitted the nutmeg based on previous reviews used regular chicken broth instead of low sodium and ended up adding olive oil to the pan with the potatoes and broccoli stems didn't ended up using the onions as my family doesn't care for them 2 of my 3 kids enjoyed and we will definitely make it again. Only made about 6 servings will definitely double the recipe next time for leftovers :

Evidently I didn't do something right! First of all the bottom of pan turned brown. I did have it on medium heat! The flour never got toasted or whatever the word was. After bringing to boil & simmering, the liquid never thickened but sure turned brown from the cooking spray coming loose from stirring. It was very time consuming, we didn't like the taste, and was a waste of money & a lot of good ingredients! We ate it for supper, my husband nuked a bowl for lunch the next day & it wasn't any better so the rest went down the garbage disposer.

I doubled this recipe and subbed 1 can whole evapped milk and used 1 fat free can.
It is absolutely delicious and I'm so glad we have all of these yummy leftovers.
I also added cayenne pepper, about 1 tablespoon for the doubled recipe.
And to those that left out the nutmeg?! You guys are crazy. It ties this whole dish together. Nutmeg + dairy can be an amazing combination when done correctly. You just can't use too much or it's over powering. Be conservative.

I will totally make this recipe again! I think I'll add even more potatoes next time!

Made this for my family and everyone enjoyed it (even my wife who later revealed that she was expecting it to be awful - she's not a big fan of broccoli. Kids from ages 10 to 2 ate their servings with the older ones asking for seconds. I skipped the nutmeg and replaced with some cayenne and also added a couple extra potatoes. It was pretty easy to make, the ingredients are all low-cost, and it fed a family of 6. That makes it a winner for me. The only reason it's not a 5-star recipe is it seems it could use a little something extra to really make it memorable. I'm not sure what that is though.

I made this last night and it was delicious! I followed the recipe exactly and mine only came to 181 calories per serving instead of 230 which makes it even better for me! : It did take quite a bit longer than the recipe states though (took over an hour from start to finish. I will definitely make this again but will leave out the nutmeg and replace it with some cayenne or red pepper flakes.

It was great!! I followed the recipe exactly. The only change I did was to add some cayenne pepper since we like our soups to have a bit of a kick. I did add a dash of ground nutmeg and I couldn't really taste it in the soup so it was not overpowering like some others have experienced. It was really easy to make, and was very delicious! This one is a keeper for sure!!

This was an easy and quick way to make a nice healthy and tasty winter soup. I used ground nutmeg because I didn't have fresh and unlike some of the previous reviews it did nothing to adversely effect the flavor. Since I don't diet I used half and half instead of the evaporated milk. It was great. Gonna fill a container and take some over to my daughter-in-law, grandaughter and son. Just so they'll have a nice healthy surprise...plus I always get immediate feedback from them. Thanks :

I followed the receipe exactly and loved every bite. However, my six year old son wasn't to thrilled about the chucks of broccoli and potatoes. So....I split the soup into two and used an immersion blender for his and kept my exactly the same. Mommy and son are both happy campers now. Thank you for another keeper.
