    I first heard of the "Hummingbird Cake" when in Ireland. It is like a carrot cake, but oh soooo good! I can't wait to try this recipe

    Does anyone know why this is called a 'Hummingbird Cake ' ?

    My cakes usually come out of the box but not this one. The first time I ate this cake, a male co-worker had brought it into the office. He had baked it himself. I fell in love with it. I never thought I could make such a good home baked cake. Every time I make/take it somewhere, there is never anything left over. It is so easy to make. Maybe I should make one tomorow? Sounds good to me. If you've never tried to make this cake, please do. You'll be surprised at how easy it goes together and how great it tastes!

    I have a "secret" carrot cake recipe that is so similar to the Hummingbird cake recipe....and everyone LOVES it!
    Don't change anything...the recipe is perfect!

    I've made this recipe many times over the years and it is, without a doubt, the very best cake I've ever made! Absolutely everyone in the family loves it. I've made it for my mother-in-law for Mother's Day for several years running now and I recently made it for my sister and nieces. Everyone has always asked for the recipe!

    I made this cake for a friend at work for his birthday. The actual cake tasted so much like carrot cake that people assumed it was. It was delicious and moist. The icing was also delicious, lemon rind was perfecto! I used canned pineapple & pureed in the blender. The cake disappeared in no time & when it did, my supervisor scooped up the crumbs & ate them with her bare hands!

    My husband of 25 years has always asked for a spice cake for his birthday or a special coconut cake (that he has nicknamed the Yum Yum cake that we used to get from a local bistro that is now closed!. I baked this cake for Easter and added a handful of coconut to the cake batter. He now is calling this the Yum Yum cake and has requested it for his birthday in 2 weeks. Very moist cake and the frosting has a very bright flavor!!! Loved it!

    Geezzzz, I hate to be the first to say I didn't like the cake. I loved the icing, but not the cake. I followed the recipe exactly as it was written and did not like it. It was a very heavy cake and reminded me of a heavy fruitcake without as much fruit. I loved the icing, but not the cake. I think those that love fruitcake may love this recipe. Don?t get me wrong, it doesn?t taste like fruitcake, it only reminded me of fruitcake. Another thing was in the photo, the icing is white, and mine was a very light yellow, not white at all. The cake was beautiful and very moist, but I won?t make this cake again. I will definitely make the icing!

    I am not typically a cake baker, but this cake is "The Bomb". It's sort of a pain to put together (uses lots of bowls, but worth all the trouble! Set all the ingredients out, toast the pecans, grease and flour the pans, etc. first. Lots of stuff to do. Honest.....it's worth it. Forget the hummingbirds...they are way too hard to catch!
