Ingredients
  • Kosher salt
  • 8 ounces lasagna noodles, broken into pieces (about 10 noodles)
  • 1 tablespoon extra-virgin olive oil, plus more for drizzling
  • 1 onion, chopped
  • 1/2 pound hot or sweet Italian sausage, casings removed
  • 3 cloves garlic, chopped
  • 1 teaspoon dried oregano
  • 2 tablespoons tomato paste
  • 4 cups low-sodium chicken broth
  • 1 15 -ounce can crushed tomatoes
  • 1/2 cup chopped fresh basil, plus thinly sliced leaves for topping
  • 1/3 cup grated parmesan cheese (plus more for sprinkling, optional)
  • 1/4 cup heavy cream or half-and-half
  • Ricotta cheese, for topping
Directions

Bring a large pot of salted water to a boil. Add the noodles and cook as the label directs. Drain; drizzle with olive oil and toss.

Meanwhile, heat 1 tablespoon olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the onion and cook, stirring, until softened, about 4 minutes. Add the sausage, garlic and oregano and cook, stirring and breaking up the sausage with a wooden spoon, until the sausage is browned, about 3 minutes. Add the tomato paste and cook, stirring, until darkened, about 2 minutes.

Add the chicken broth, tomatoes and 1 cup water; cover and bring to a simmer. Uncover and cook until slightly reduced, about 10 minutes. Stir in the noodles, basil, parmesan and heavy cream; simmer 2 more minutes.

Divide the soup among bowls. Top with ricotta and sliced basil.

    I've made this soup several times and we think IT IS THE BEST!! I add a heaping spoonful of ricotta on the bottom of the bowl before I add the soup. I also throw a big handful of shredded mozzarella in the pot as well. This just does not get any better. I also use a pound of sausage. We like it meaty. I'd give this a hundred stars if I could : D
    I've made this 3 times in the past month for different groups. EVERYONE loves this soup. People were scrapping the bottom of the pot for every last bit when I made this at my last party. I omitted the dollop of ricotta - soup is very rich and flavorful so it is not necessary but I'm sure it wouldn't hurt either! I've been asked by 4 people for this recipe. It is truly a hit.  
    My future daughter-in-law made this when my husband and I visited our son in Phoenix ,Arizona. We were starving the night we got there and this hit the spot. I gave her a gift subscription to the magazine. It was very good then and very good tonight when I made it. I didn't change anything in the recipe, as far as ingredients were concerned. The only change I made was to use malfada pasta which is a miniature version of lasagna. Will definitely make this again. So good on a very COLD night.

    Great soup! Everyone in my family liked it (which is no small task). It did take me longer than the recipe stated. I followed the recipe, as written, and it turned out great. I think next time I'll serve it with a mozzarella grilled cheese sandwich. :)
    This soup proves you don't have to simmer soup for hours, quick, very tasty. Had with Pumpkin Focaccia and salad.

    Wow amazing Fall soup! I used oven ready noodles and boiled them right in the soup. Next time I will add chopped spinach and other veggies. Fast and tasty!

    Amazing! Added some ground beef to this as well and didn't have lasagna noodles so we used farfalle pasta instead. This will become a regular in our house!

    This recipe is great!
    Made this after seeing it in the magazine - and it's delicious. It really does taste like lasagna. I didn't have cream so I left it out and added extra parmesan cheese instead. Also I didn't add any basil. This recipe makes a huge pot of soup, so freeze it or serve to a crowd.
    This is the best soup! It's hearty and the Italian Sausage really gives it a great taste. I am making it for the second time in a week. My family raved on it. It's also rather easy to throw together.
