Make Classic Sugar Cookies with lime zest instead of orange. Whisk 1 1/2 cups confectioners' sugar, 2 tablespoons green decorating sugar and 3 tablespoons lime juice, then spread over finished cookies.
These cookies are amazing. Good both warm and cold! One person commented that they are crisp rather than chewy, but I've found that if you cook them a bit less they're very soft and chewy. I like to make the icing a bit thinner by adding less powdered sugar so that it becomes more of a glaze. The decorating sugar isn't necessary.
To cut down on the sweetness of the icing, omit the green decorating sugar and use green gel icing color. Just a little on the tip of a toothpick goes a long way!
