Just made them for Easter and had a sample. They are amazing! I made them in mini muffin pans and it made 16.

I am not a baker, and even though this recipe takes some time, it was totally worth it. I did however make a slight change by using puff pastry shells instead of making the crust, following everything else. Came out great. Can't wait to make again.

I am a baker, however, it did take me quite some time in the kitchen to perfect this- totally worth it though! I doubled everything and I stuck with the standard size muffin/cupcake tin and things worked out almost flawlessly- the only thing I tripled was the dough and then seemed to work cohesively...I will definitely try this again!

Well, well well!! This was the EASIEST and the best tasting Lemon Curd ever!! It doesnt make a lot I used it to top Gingerbread cookie/pie-cake. Is that like a turduckin...! its a must try and so, so easy.YUM I ate it off the spoon, warm!

These were incredible! The filling was so luscious and creamy, I'll never try another lemon meringue pie filling - this will be my standard for sure!

i doubled the recipe for both filling and meringue and made the crust as described...all tasted wonderful. i DID make little mini pies so we could all have little nibbles and it turned out great that way for the younger kids who only wanted a little. i WILL NEVER buy lemon curd again, this is fabulous and super easy....however, my meringue was not as good as it should have been but i'll keep trying until i get it exactly right.....WONDERFUL RECIPE...perfect for our Easter dinner!

The recipe is quite good, however I don't think that it makes enough lemon filling. The next time I make it, I'll most likely double the filling recipe. I used store-bought pie crust as well and it worked perfectly.

i doubled this recipe and i am not a baker, but it turned out quite well. the only thing i didnt double was the cornstarch and the cream of tarter. i did 1.5. i've never made meringue that way before. it took me about 3 hours total to make, but there was a lot of love put into this dessert. i hope my family loves it! i think next time i will use store bought pie filling... the crust will always be from scratch from now on though! my house smells fantastic right now!

Excellent as I love making my own crust why any one would not make their own is beyond me and think that it was WAY TOO MUCH work they taste so much better than store bought crust.
