    Has anyone tried making these in mini muffin tins with graham cracker crust? I'm betting delicious! Store bought pie crust worked well, too...

    The crust was WAY too much work. I used already pie crusts and they worked really well. Curd was very good and easy. Made these for a dinner party and they were cute and delicious. Perfect size!

    Perfect!
    Crust was flaky, lemon cream was tangy sweet! I doubled the meringue to make it extra high! Delish, tried it out on the family tonight... but will repeat next week for a potluck!

    I followed the advice for eliminating the refrigeration step for the dough and these were fantastic. This round was a test (much to my husband's delight. Next time I entertain this will definitely be a top choice.

    I'VE NEVER RECEIVED SO MANY COMPLIMENTS ON ANY ONE ITEM THAT I'VE BAKED. THESE GOT RAVE REVIEWS. I'M NOT AN ADVANCED BAKER...NOT YET ANYWAY, SO MY ADVISE TO YOU (IF YOU'RE NOT ADVANCED IN YOUR BAKING SKILLS WOULD TO TAKE YOUR TIME AND ALLOW YOURSELF PLENTY OF TIME. IT TOOK ME FOUR HOURS TO PUT THESE LITTLE DELECTIBLES TOGETHER...SO WORTH IT!

    I love anything lemon flavor and these were no exception. Fairly easy to make and save well. Not many guests took them though. I think they were a bit large for a finger food. Perhaps a dinner party would be more appropriate.

    I did this dessert for our Christmas family dinner and it turned out quite well. The only changes I made was instead of making the dough by hand I bought the pre-made pie dough. This worked out quite well, but I think it is necessary to bake it just a couple minutes longer, since you are freezing it. Also the amount of lemon curd produced is a little short for the number of pie shells so feel free to maybe multiply that part by 1.5. Other than that it was a great hit with the family and I would definitely recommend it.

    The filling ended up tasting like VOMIT and I followed the recipe EXACTLY!!!!! And no one in my family could finish ONE. Serving this recipe is a total and utter humiliation.

    Yes, they are tart, but the sweetness of the meringue offsets it nicely. I used the roll out crusts in the grocery store to save time. They worked out just fine. Each crust will make 4 4-1/2" mini crusts.
