I made this recipe for my grandson (2 1/2 yrs. and the first word out of his mouth was YUM! I didn't do the roasted tomato and baguette, but instead, sliced cherry tomatoes for him. He placed one on his spoon as he dipped into the soup. He finished the bowl and asked for MORE!

Overall I liked this. Next time I try it, I'll use about half the amount of shallots - was a little too onion-y for me.

I love Mac and Cheese, so I thought I'd give this lower calorie soup a try. I did not enjoy this recipe. I even added extra cheese (a sharp cheddar and pureed the vegetables. My husband and I decided that it wasn't terrible, but I won't be making this one again.

I am a horrible and very slow cook but I made the soup and loved it. I actually made it with vegetable broth, Quinoa Noodles instead of the chicken broth and regular macaroni. I think the Quinoa noodles expand more than the regular macaroni give you a fuller look. I did a mix of mild cheese and organic white cheddar. The organic cheddar has more of a bite to it so I think that helped flavor wise.

This was just terrible. I took other reviewers' suggestions of pureeing the minced veggies and adding extra cheese, but my family still hated this. It just tasted like chicken broth, and it had a weird texture. It also looked nothing like the picture (much less pasta, not as creamy. What a waste of time (and cheese!.

We made this soup the other week on a rainy day.Instead of the elbow pasta we used cellentani (google the name to help give it some texture. Also we completely pureed the veggies all together and added it to the broth that way. This would be a prefect way to hide the veggies from your picky kids(this coming from a picky eater. Then we also used both sharp and mild cheddar and added more cheese then was called for. About the baguette, we made some as called for and then just put a butter and garlic mixed on some of the rest of the baguette. Overall the soup was amazing and we are excited to make it again!

We tried this one today for lunch. It is a quick easy soup to prepare and gives you all the pleasure of macaroni and cheese. I thought that the Louisiana hot sauce addition would be great, or trading one cup of broth for a cup of beer might add a nice adult twist. We will keep this one in our recipe box to come back to in the future.

Great kid recipe. I think maybe it could have used something more for adults. Louisiana hot sauce? I don't know. But the kids (and they are picky! ate it up and asked for more. The other reviewers are right about the bread and tomatoes--they didn't add anything. Not worth it.
