If you like noodles and mexican food you will love this. It sounds odd but very tasty and easy to do. (Although not so odd if you've had mexican sopa with fideo. I made with only 1 chipotle and it was hot enough. My picky husband went for seconds, definitely a keeper. This is a great recipie to use leftover turkey or chicken. My 2 1/2 year old really enjoyed it until the heat grew on him. Next time I will make without the pepper so he can enjoy it also. I used queso quesadilla cheese as it melts well and I had it on hand.
