I just recently signed up to receive the Food Network Recipe of the Day, and was excited to try this one out for Valentines Day. Unfortunately, this was a BIG disappointment. The cupcakes were extremely dry, didn't have rich flavor, there wasn't enough peanut butter topping for the amount of cakes the recipe produced, and the chocolate topping was sticky and didn't set. I am not so sure that I will try a desert again. For the amount of time and $$ spent on this, a boxed cake and tub of frosting would have been much better.

I agree with the other posts that it is hard to believe that anyone at the FN tested this recipe. I made a larger size mini like the stores sell and it made 29. I knew there was no way they would take 20 minutes. I baked them for 13 min and 30 sec. Probably would have been okay at 13 or a little less. Definitely does not make enough peanut butter topping, I would double that. I let the topping get pretty firm before beating and it whipped up fine. I piped it with a Wilton 1M tip so there were grooves for the chocolate glaze to settle in. Nothing special about the chocolate cupcake recipe. Will definitely be using the peanut butter ganache and chocolate glaze on chocolate cupcakes again. The nice thing about the peanut butter ganache is it isn't as sweet as making a peanut butter buttercream.

I agree with rward2121. I doubt this recipe was tested by Food Network Magazine. Recipe made way too much chocolate batter and not enough of either of the two toppings to even cover the 24 cupcakes the recipe supposedly made. Cake was dry. Ingredients were expensive. Dirtied way too many bowls and utensils. Took way more time than stated also. Too much money, time, fuss and mess for a mediocre product.

This is the second recipe I have tried from this "daily recipe". Although the recipes sound and look yummy, the daily e mail should be called "daily dump of your time and money". I've had it with these recipes. This one made many more than 36, but I didn't have enough pans to prepare all of the batter. Yes, they were dry like one of the other posters said. Also, the peanut topping was very dry and didn't look anything like that which was shown in the photo. Yuk, what a disappointment. Why don't you people test these before you suggest them to others?

Soooo disappointing. There is something very wrong with this recipe. I followed it to the letter, but the recipe made 48 mini-cupcakes, not 24. I think the ingredient amounts and cooking time in the recipe are for 24 regular cupcakes. Unfortunately, the recipe as written is a waste of good ingredients and a lot of dirty dishes. Idea is good, but I will use a different cupcake recipe and perhaps a dollop of peanut butter frosting with the ganache from this recipe. I expect more from a Food Network Magazine recipe :-(.

These were a homerun! The cake had nice flavor (I did add 1/2 tspn of instant espresso powder for depth, moist and a nice crumb. The peanut butter "frosting" was delicious and dipping it in the chocolate ganache took it over the top. They were moist (even the next day, the perfect size and super popular. I would make these again. This recipe would be great with other variations; mint, chocolate, butterscotch, white chocolate...the possibilities are waiting to be discovered! (and I'm on it!
