    ABSOLUTELY DELICIOUS! I made these for a wedding shower and they were gobbled up in no time! I left out the mushrooms since the bride didn't want any, and they still came out perfect. Definitely make these the night before, because they do take more time than you'd think. Be sure to use more than just a light mist of cooking spray in the muffin tins so they come out easier. (I just used a light amount of Pam the first batch and some of them stuck when taking out. For the subsequent batches I used more and they came out perfect!

    A little bit time consuming so I recommend baking these the night before and just reheating in the morning. But they are delicious!!

    Im not a big Quiche fan but was asked to make mini's for a late night breakfast buffet over New Years. These came out great. I would add some more spice to pop it up next time for my tastes but a simple dish for snack, apps or a easy meal with salad.

    Hint: Dont cook the whole time with out checking at intervels. In my oven they went a nice brown at 19 min or so. At the time listed they almost were too dark (I was using a dark mini muffin pan. Experiment with the amount in each, they didnt raise as high as I expected so on my second batch I fill much closer to the 3/4 ish side and got a nicer bite.
