I made this salad for a church pick-nick 2 years ago with grilled chicken breast (shrimp would have been a health risk and I'm still being asked to make it! It's great without meat, with shrimp or chicken... very versatile.

This recipe is really amazing. I have made it several times for big crowds, as it is easy to make ahead. It has always been a huge hit. The flavor combinations are wonderful! Thanks Ina

This was easy and delicious. I'm not a fan of cucumbers or olives but they were delicious in this dish. We made this twice in two days. Everytime we eat it we are amazed at the flavor.

I love the flavor of this salad. You have to like Orzo, feta and dill, which I do. I did use whole wheat orzo and I was lazy and bought cooked shrimp, pulled the tails off and tossed them in the salad. Easy it the name of the game... and I did not use mint, as I am not a big fan!

This was a GREAT recipe! I actually made it without the shrimp as a quick side dish to take to a potluck, and everyone loved it! So fresh and clean-tasting. I can only imagine that it would be great with the shrimp, as well. Definitely will be making this one again!

WOW! What a refreshing change from all those salads we are reviewing and tasting. This is light and very refreshing. I have to agree with amatterofthyme that grilling the shrimp is probably the best way to go. The shrimp have much greater flavor that way. I only added a little extra lemon juice to give it more "zing" but of course you must try it as you go.

This is an excellent dish! I've made it many times and it's always a hit. If I don't have mint, I substitute basil and it's just as good. I've also grilled the shrimp and it gives it nice flavor. Definately a keeper!
