    I followed the recipe exactly, except that I doubled it. I used breasts on the bone, no skin and cut in half as directed. Used a thermometer to check the temp but they came out a bit dry and I was hoping for a crunchier outside. Maybe I try again but next time with thighs!

    We liked this method allot. I have made almost same recipe in the past, but coating was seasoned corn flakes. It was also good. Nice crunchy skin and a great alternative to actually frying the chicken. I only added a bit of the cayenne pepper.

    Really liked this recipe. The only thing I would change would be to cut the cayenne in half. Otherwise, it was a good fit for my husband, 15 year old daughter, and me.

    This is the best oven fried chicken I have ever had. I will never make regular fried chicken again. Even my husband loved it. We loved the amout of heat, spicy but not too spicy.I also used this recipe on Tilapia and Cod and it was just as good. Very versitle recipe and easy. I wouldn't change a thing.

    This one is a keeper! I used olive oil, and garlic flavored bagel chips. Both worked fine. I also tripled the amount of Dijon as I like strong flavors. The cayenne was just right. One comment, there was enough of the mayo mix and crumbs for at least 6-8 pieces of chicken, and it tasted great the next day. Next time I will do more chicken, and slice the rest for chicken sandwiches on roasted garlic bread!

    Ok, so I was VERY skeptical about another "healthy" version of oven fried chicken, but this one is a definite hit! Not too labor intensive (with the exception of getting out the old food processor with a very good result. A definite recipe to keep, and replace all other fried chicken recipes with. It is spicy, as other reviewers noted, so I cut the cayenne pepper down to 1/4 tsp. Still a little too spicy for my 2 and 3 year olds, but my 7 year old LOVED it!!! Great texture and taste. TRY!
