I have made this recipe a TON of times - found it useful to not just roll the chicken in the crumbs, but get the chicken coated well with the mayo and then really press the crumbs onto the chicken with your fingers. I too use half panko for the crumbs. Once I place the chicken on the rack, I spray them down generously with some canola cooking spray. Have the oven ready and up to temp before breading!! DONT LET THEM SIT too long in the crumbs before the oven because then the crumbs get soggy.
The flavor is very yummy - the paprika really shines in it. Great chicken to use for dipping (we like Frank's Red Hot Sauce!

This recipe was easy and very tasty. My only complaint is that the crust all fell off, even though I followed the recipe. Any suggestions?

I followed all the directions and mine was not crispy at all..it was very mushy for the most part on the outside...

off the chain. i used the panko since i didnt have the bagel and i didnt havae mustard but it turned out perfect. super moist and super delicious. def. a keeper

So good! I used panko instead of the cereal and stuff and didn't use a food processor because I didn't want the panko to be crushed any smaller. It was perfect!

While this was cooking it smelled absolutly fantastic!!! I used boneless, skinless chicken breasts and cut them up into nugget like pieces. My only issue was that it was way salty! I should have thought of it first to see if my bagel chips were already salted. Salt is an easy fix for next time.

This was an excellent meal!
I used Spicy Brown mustard for an extra kick. I also added a little extra crumbs and subs. sweet paprika for smoked paprika. I dont have a food processor,so i put the crumbs in a bag and broke them down that way. I then used a rolling pin to make more fine. It worked fine! I was able to make 8 skinless, bone-in, chicken thighs. MMm Mmm!
They were, 'WICKED GOOD!"

This chicken was absolutely delicious!! Of course, because its oven fried its not your traditional "fried chicken" but from a California mind set - this recipe is much healthier and 10x more delicious than KFC or something like that. The seasoning was a bit tangy (which is fabulous and the chicken was super moist - the entire family loved it!! Will definitely be making again!
