    I was browsing through some recipes in the "Healthy Eating" section and stumbled across this one. I was having a dinner party for a few girlfriends and decided to let them vote on what I would make for dinner. They chose this chicken dish and it was fabulous! I used cornflakes and melba toast as the mixture and then I added some onion and garlic powder and Italian seasoning to the mix. It was a great touch!

    This recipe was AWESOME!! I took a chance and prepared it for some guests, everyone loved it!!! Every last piece was eaten....yum-yum.. i will most definitely make this recipe again!

    I just made this chicken and it's great! The only change I made was using store bought bread crumbs instead of melba toast or bagels. Slightly similar but much better than shake-n-bake. After everyone is done eating, I'm gonna go lick the pan! Thanks!

    I really had my doubts about this reciped but decided to try it anyway since we are trying to stay away from fried foods. I followed the recipe exactly. The chicken was so flavorful and moist. I was very impressed. The only thing I would change would be to reduce the cayenne pepper. The chicken was too spicy for my kids. I will definately make this again and again.

    This is the best recipe for oven baked chicken I have ever tried. My wife and I flipped over the wonderful flavor and moist texture. The mix of mayonnaise and dijon mustard really is "over the top" excellent. Give this a try, even the kids will love this one.

    I have tried a million different recipes for oven fried chicken, BUT this one is really a keeper. I used boneless, skinless chicken breasts cut into fairly thick strips......other than that followed recipe exactly! A hit with the whole family!

    I agree with the reviewer below that this recipe doesn't taste any better than shake and bake with added cayenne. However, we like shake and bake in my family. So for convenience sake I would definitely use the shake and bake over going through the (small trouble of making the crumb mixture in this recipe. The mayo-mustard mix is an excellent idea and one I've used before. In lieu of brining, it makes the chicken very moist. One could easily use it with shake and bake. There is one other recipe for chicken I really like and that is put out by Albers corn meal. It is a recipe for oven baked "fried" chicken. But back to this recipe. One other thing I want to mention is that putting the chicken pieces on a rack above foiled baking sheets (like the recipe calls for is key to getting crispy chicken. I've always put the chicken pieces directly on the foil and came out with greasy chicken on the underside. I didn't enjoy cleaning the racks afterwards but crispy chicken is worth the extra clean up.

    I prepared two recipes from the Food Network library; One Pan Sage, Onion, Chicken & Sausage...and OVEN FRIED CHICKEN. The adults loved the One Pan Sage Chicken dish and THE KIDS LOVED the Oven Fried Chicken dish. Both dishes were easy to prepare and came out Beautiful, great presentation and delicious.

    MY HUSBAND AND I LOVED THIS CHICKEN. HAD A FRIEND VISITING FROM CALIFORNIA AND SHE LOVED IT ALSO AND TOOK THE RECIPE HOME TO MAKE FOR HER HUBBY AND HE ALSO LOVED IT. THIS IS A KEEPER......
