My husband is sooo picky, and he actually told me this was a homerun! I have put it in my rotation of go to meals- it's quick and because there is no frying the clean up is a snap. I have forwarded this to all my friends that I know have to cook dinner night after night. I just loved it, it came out excellent!

This is hubby's favorite way to have "fried chicken." I have used boneless/skinless thighs and chicken strips. I don't use the salt for a more heart-healthy entree -- we don't miss it! I've also used anything I have that's crunchy and dry for the coating like crackers -- I keep forgetting the bagel crips.

This was a quick and easy recipe to make, but it certainly didn't lack any flavor! It was comfort food to the max, but you weren't left with that greasy stomach feeling. Light and delicious! I can't wait to make it again.

This was pretty good, although it is a bit too spicy for my liking. I thought that the amount of cayenne seemed large, so I only put in 1/8 tsp black pepper, and it was still very spicy. Everything else was great. I substituted the mayo for plain yogurt. My 12 year old son loved it. I believe his words were, "This is hella good!" The left overs weren't crunchy, but still good.

The skin on the chicken is incredibly crispy and flavorful. Really, you won't miss the higher fat version. It also reheats well. I made this dish earlier in the week, and I've been eating it for lunch for 3 days now, and I'm not sick of it!! : It really is good! Thanks, Food Network Group!!

This was so easy. I used garlic bagel chips w/ rice crispies. Threw spices and evoo in food processor together. I would use more cayenne next time. I used a lot more dijon than called for and just used my hands to smear on bone in but skinless thighs and legs. Served with whipped cauliflower and a cold corn salad. Definately one of my husband's newest favorites!!

After reading all the reviews for this chicken, I just had to try it for dinner last night. After being married for near 29 years, my husband declared this the best chicken I ever served him! My 15 year old son nodded in agreement, then helped himself to a second large piece.
I too found that both the mayo/mustard & the bredding mix was enough for 7 - 8 pieces of chicken. I used the garlic melba toast with the Crispex cereal...fabulous. Definately not too spicy for Texans!
I may try it next time with smoked paprika in lieu of the sweet paprika just to change it up.

This is the best "heart healthy" oven baked chicken recipe yet! My kids loved it - even though it was a little spicy. My husband - who usually puts hot sauce on everything refrained this one time. I'm definitely going to put this one in to the regular rotation of dinner recipes.
