    For a healthy alternative to fried chicken, this was excellent and had a nice crust and was very moist. However, for our taste (with kids the amount of red pepper was a bit much and next time we will cut the red pepper and the salt by half. This is a keeper. We all loved it ages 6, 10, 13, and 2 thirty+ somethings.

    Our family really enjoyed the chicken, but it was too salty! I will cut the salt in half next time. The other flavors and the crispy texture made this recipe a keeper :

    I made this with garlic flavored melba toasts. This made the chicken very moist and tender. The next time, I will try to make this into strips, as my family prefers to eat boneless chicken. Living at altitude, the bone-in chicken took a very long time to cook, even with the convection oven.

    This chicken was delicious, easy and no one will have a clue its a healthy alternative! I used Special K and Melba toast for the mix and garlic powder instead of paprika it was great! I also took the recommendations of some other reviewers and cut the cayenne in half, and they still had just the right amount of kick!

    I love fried chicken, but hate the greasiness of it. This is the best alternative! My bf loved it and asked me to make it again tonight!

    I have to admit I was skeptical. Neither my husband or me likes mayo or mustard much. Chicken turned out very juicy and DELICIOUS. My 1- and 5-year old sons loved it! Breading crisps were outstanding. Will double breading recipe next time. Thanks for the recipe! It's going into our bi-weekly rotation!

    I made this last night and was happy with how it came out. I like a bit of kick, so the cayenne was perfect for me, although you may want to omit it if you're sensitive to any amount of heat. I substituted Cheez-Its for half the cereal to give it some tang. (Note: If you do this, omit the salt. Next time, I'll probably use more dijon and less mayo. I'm also interested in using buttermilk, as one reader suggested.

    This recipe was such a great find! Putting the chicken on top of the rack rested on the baking sheet made sure it was crispy all around. It's definitely got some kick to it, so if you don't like spicy, cut the cayenne in half! I used garlic flavored bagel chips and they worked great!

    This was tasty and crispy. I used thighs, which were very juicy, and I cut the red pepper down to just a pinch. My husband and son had no idea that this was a low-fat recipe.
