Directions

Preheat a baking sheet on the lower rack in a 450 oven. Blanch 1 head chopped broccoli in boiling water with salt and sliced garlic for 1 minute; drain. Toss with a splash of olive oil, a handful each of breadcrumbs and parmesan, salt and pepper. Place on the hot baking sheet and top with more cheese and breadcrumbs; roast until golden, 15 minutes.

    This is wonderful! Totally delicious, totally easy. This is my husband's go-to recipe; any time he makes dinner, he tosses this in. I can't say enough positive things about this recipe. And for those who want exact ingredients, it all depends on how much broccoli you have. Just wing it, you'll be fine.

    I've never blanched or roasted vegetables before. This recipe was simple and a success. I never eat broccoli so I probably prepared it wrong, which is why only 80% of the broccoli came out of the oven crunchy. I made this for a holiday meal with friends, but I won't make it again for myself - because I don't like this vegetable.
