Directions

Preheat a baking sheet on the lower rack in a 450 oven. Blanch 1 head chopped broccoli in boiling water with salt and sliced garlic for 1 minute; drain. Toss with a splash of olive oil, a handful each of breadcrumbs and parmesan, salt and pepper. Place on the hot baking sheet and top with more cheese and breadcrumbs; roast until golden, 15 minutes.

    Easy, fast, delicious. I like to mince then mash the garlic and let it sit in the olive oil while I'm doing other things in the kitchen. I blanch the broccoli just for one minute. After blanching, be sure to pat some of the moisture out of the broccoli, otherwise it will come out a little soggy and not crunchy. Next, I combined the broccoli and the garlic/olive oil mixture and then put in the oven for 12 minutes. Absolutely fantastic. I've filed this away under the heading "Best Broccoli."

    Extremely easy and quick! Slightly crunchy, loved that in the brocoli and cheese. I used Panko so that added more crunch.
