Amazing recipe. We didn't have carrots and substituted basil for the mint, but the results were delicious. The goat cheese adds a creamy goodness that is otherworldly.

This was an INCREDIBLE dish. I make a ton of pasta for my family so were always deciding which recipes to keep or throw out. This one is a definite keeper! My hubby is not a huge fan of mint so I will probably use basil next time and I added some prosciutto for protein. The goat cheese was the key to making this dish so light and creamy. We had left overs two meals after because it was so good!!

Delicious! I couldn't find any mint, so I used dried basil. I also used Campanelle I had on hand, and it tasted great! This is for the recipe book!

This was fantastic. I made a few modifications- Roasted the veggies in the oven for half hour with herbs and added mushrooms to the garlic whilst cooking. I also subbed goat cheese crumbles for blue cheese. The red pepper flakes kicked up the heat factor, mint added freshness and the flavors came together beautifully.

My fiance and I LOVED this dish. I followed the recipe except I did not use mint and I used regular salt instead of kosher. The preparation is very straightforward and I felt good knowing that there were so many fresh veggies involved. I was nervous about the goat cheese since I had never cooked with it before but it worked out great. The recipe made more than 4 servings for us but I think thats just because we tried to make it stretch (because it was so good!. This one is definitely worth a try!
