I love this pasta. You can easily adapt it to your liking. The goat cheese is what puts it over the top-- do not omit it! I had triple helpings the night I made it and then ate it for lunch for two more days. I look forward to making it again.

Loved this pasta - so easy and filling! It fed 4 adults at lunch, and then my husband and I finished leftovers for dinner the same day. You definitely need to save some pasta water and olive oil for drizzling afterwards, and be sure to mix the cheeses in right away so the hot pasta will melt everything together well. I thought the goat cheese added a wonderful, savory flavor. I skipped the mint because I was aleady using it in another dish I was serving with the pasta - didn't miss it. I also used tri-color fusilli which made a beautiful, colorful dish!

The grocery store was out of basil so I tried this recipe with the mint it called for instead of basil so many reviewers have suggested. The mint is a nice contrast to the crushed red pepper. I think I'll use basil next time though. I just prefer that flavor. I only used 1/4 tsp of salt. And I think I'll add sliced black olives next time too. This is a great recipe though! Lots of flavor and love all the fresh veggies in it. I'll definitely be making this again!!

I absolutely loved it until I added the goat cheese... Never had it before so I thought I would try it and I'm not a fan of the taste. Kinda gave a rotten milk after taste. Next time I'm going to leave that out but other than that it was great!

Such a good dinner! We made it 2 nights in a row! We added some sausage while cooking the tomatoes and garlic. The second night we used white wine instead of the pasta water. Very tasty both times. The mint adds an incredible tasty layer to it all - don't skimp on the mint!

I thought this was an excellent dish, but I also made a few changes...
1 I roasted a bunch of veggies I had on hand in the oven. I didn't want to boil them. I used brocolli, zuchinni, onion, carrots, peppers.
2 Didn't use mint, used basil and italian seasoning.
3 Cooked a chicken breast to put on top.
BUT... the overall idea of this recipe was fantastic and I will make this again and again!!!

YUMMMMMM! Very healthy, delicious, and simple to make. Added sliced mushrooms before putting the garlic in the pan, turned out great!

DELICIOUS!!!! and I have not even waited for it to cool yet!! I just know its going to be even better tomorrow. I cant wait for lunch now! This will be a great dish to bring to someones house or just any time at all. LOVE
