    F A N T A B U L O U S ! ! ! ! ! !
    Finally...a pasta recipe that doesn't have meat in it! I am a vegetarian so this recipe was great for me

    This was an EXCELLENT recipe! I used the ingredients as listed, but added a pound of roughly chopped shrimp to the mixture. I just cooked the shrimp when I "toasted" the garlic in the oil and it turned out great! The mint refreshed the dish without overpowering the flavors. AND I might add that this dish is as good cold as it is hot - just drizzle a little white balsamic vinegar on top of your serving to wake everyone up. 8-

    This is certainly a keeper! Prepared as directed except I used asparagus for the green vegetable. This will become part of our spring/summer repertoire!!

    Delicious and easy! Local grocer didn't carry snap peas so I used asparagus tips instead. I substituted mint for basil, added more garlic cloves and sauteed all vegetables in pan together rather than add them to pasta water. Goat cheese added a wonderful creaminess to the dish. Would absolutely make again.

    This was amazing! So quick and easy to make. Contrary to the other reviews, I included the mint and it added an awesome subtle but refreshing flavor. I substituted asparagus for the broccoli because that is what I happened to have on hand and it turned out awesome. This is definitely one to keep in the recipe box.

    This was the best meal! I used basil instead of mint because I wasn't sure if I would like mint. It was delicious, my entire family loved it! Can't wait to make it again!

    Delicious, easy, healthy... even my veggie-hating new son loved it and had seconds. I wonder how many days a week I can make it before the family tires of it?

    This is an easy and delicious meatless entre. I hate goat cheese so I used feta instead and also substituted fresh basil for the mint and used lots of veggies.

    I tried to make this, but without the peas and red peppers, but I used too much goat cheese and it tasted like crap. So, remember that goat cheese is STRONG and stick to the recommended amount
