    My fiance hates veggies and I actually got him to eat this! I didn't add the part with the tomatoes seeing as neither of us like tomatoes and this still came out delicious. I'll definitely be making this again soon!

    I couldn't imagine how flavor-less this would be without using herb/garlic goat cheese. I added shallot to the garlic and a lot of pepper to get it tasty.

    This recipe is so tasty! My boyfriend hates to eat vegetable, but I really wanted to try this recipe so I made it for us, and he loved it! The mix of colorful vegetables is very appetizing, and the amount of cheese is perfect. Cheesy without overpowering the pasta and vegetables.

    Well, I started off by reading all reviews (to get a better handle on what should and shouldn't be used as well as what could be substituted. I sent my 16 year old daughter out to get the ingredients and the store didn’t have basil ( love the taste so I decided to add it but they did have mint (which from other meals I have made know it can be overwhelming so I had her pick it up. I told her to make certain to get spiral wheat pasta...well we ended up having penne whole wheat pasta which was very filling so it was OK. The salt and pepper was not enough flavor so added some lite Italian salad dressing...brought out all the flavor of the veggies...I also added some celery, baked salmon, baby carrots, and onions.

    I also left out the goat cheese...don’t think my family is that adventurous yet! Don’t think I will be adding the mint next time as well....

    Overall it was good...It was easy to prepare but took much longer than 15 mins....cutting and chopping!

    Didn't get a lot of flavor from this recipe. All I could taste were the peppers. Wasn't bad cold.

    I love how easy and delicious this recipe is ... and my teens gobbled it up too. I've adjusted it this summer, cutting out the goat cheese and mint and substituting fresh basil and whatever fresh veggies are ready in my garden. Also, I use tomatoes, not cherry, if that's all I have and it still tastes a.maze.ing.

    Such a great recipe! The mint and goat cheese really take this recipe over the top. I added some grilled chicken for protein and it was so good. This pasta is filling and super healthy. Will definitely make again!

    Very good! We all agreed that it only needed half of the goat cheese (2oz. I cut baby carrots into forths instead of using shredded carrots and the larger pieces suited the size of the other veggies well. It did not heat up very well for lunch leftovers though. It dried up overnight and soaked in all the cheese and oil.
