    These were fantastic.
I made the slaw according to Robert Irvine's recipe, which has been a family favorite for years, set it aside for a few minutes in the fridge and got on with making the burgers.

The pork I bought was already pretty fatty (about 25% so when doing the bacon, just tossed it in a frying pan with about 5 sliced garlic cloves and a couple fresh sage leaves and let the fat render out along with cooking the garlic somewhat. I drained the fat and tossed the bacon, garlic, and sage in the food processor. Then the mixture and the ground pork got happy with each other while the charcoal heated up.

After cooking to a nice 155, the buns got tossed on to get a little toasted texture and flavor, and assembly commenced. Toasted bun, Sweet Baby Rays, delicious bacon pork burger on that, then Sriracha, coleslaw, and toasted top. I have to say this in the top 5 burgers I have ever eaten.

Family liked it.... What's not to like when there is bacon in the recipe!

These had really great flavor! My only complaint is that the fattiness of the bacon caused a lot of flare-ups on the grill - which led to the burgers being somewhat burned. I think next time I'll try frying them on the stovetop and see which I like more.

These burgers were delicious! I whipped up a little bit of coleslaw with some leftover shredded cabbage in the 'fridge.

The perfect base for building your ideal pork burger. Tried it with the scallion bacon catsup and homemade slaw and it was amazing.

Oh my goodness! These are absolutely incredible! Fyi the bacon is supposed to be raw to help keep the lean ground pork moist while cooking. The coleslaw is a perfect accompaniment and would even be good with bbq sauce. I'm not a huge pork fan but have been trying to make new recipes and branch out.

Great burgers!!! Made them last night with my own homemade coleslaw and they were great! I mixed everything together the night before to let it all mary. It might have helped.

Sounds good, just a question, is the bacon cooked or raw?

So tasty!!! I nixed the slaw and sage...Instead, I used Emeril's Essence seasoning about 1/2 to 1 tsp, added sauteed onions to chop w/ the bacon used some of the onion and bacon drippings in the pork mixture...and lastly topped it w/some colbyjack cheese, sliced avocado, tomato & lettuce!! Yummers!!! I know I changed it a bit, but this recipe was the basis for my yummy creation. :-

Whats the deal with all these burgers being topped with coleslaw?
    slaw is a side dish,not a condiment!
Next thing you know, some nut will put hashbrowns on a burger!
