Directions
Combine 2 cups grated extra-sharp yellow cheddar cheese, 1/2 cup mayonnaise, 3 tablespoons chopped pimientos, 2 tablespoons grated onion, 1 teaspoon yellow mustard and 1/8 teaspoon cayenne pepper. Season with salt and black pepper. Spread on white bread.

Hands down...BEST pimiento cheese I've ever made or tasted. I've served this at several large functions and got numerous requests for the recipe at every single event. It has just a little something extra without changing the sense of what is the essence of pimiento cheese. It doesn't take the "Southern" out of the recipe but takes it to a higher level. Love it...

This is the best pimiento cheese recipe that I have ever made!!!!! I am a Southern girl, who is an expert on pimiento cheese! I have tried recipes with nuts, olives, bacon,etc. This recipe is simple and just the right balance of flavors. I have served this for company twice, both times with rave reviews. It is perfect for a picnic or to take to the lake. Wonderful!!!!!

I completely agree when it comes to the grated onion. I thought it was a bit too much. I would only use half of what it asks. Otherwise they are delicious and very easy to make!
