This was a very tasty dinner and my teenage boys even loved it. I accidentally overcooked the eggs so I can't wait to try it again and do it right.

This was so, so good--we made it for dinner, and even my kids (7 & 10 loved it. Dee-lish!

This was so light and delicious for breakfast. I know it wasn't totally healthy because of the cheese, but it was really delicious. You don't even miss the bacon or sausage with this hearty vegetarian breakfast! It was a hit with my meat-loving husband too. the polenta really adds the heartiness for a warm, comforting breakfast on a cool, crisp morning. Who knew polenta out of a tube was good? Thanks for the recipe!
