Ingredients
  • 2 tablespoons sugar
  • 1/2 teaspoon kosher salt plus more to taste
  • 2 tablespoons plus 1 teaspoon freshly squeezed lime juice
  • 1/2 teaspoon dry mustard
  • 1 tablespoon finely chopped onion
  • 1/2 cup vegetable oil, like soy, corn, or peanut
  • 1 tablespoon poppy seeds

Directions
  • In a small bowl, whisk together all the ingredients. Use immediately or store covered and refrigerated for up to 2 days.

We really liked this. It was quick to make and very light for a summer dinner as opposed to the heavy creamy poppy seed dressing found in the store. I made a spinach, strawberry, red onion and grilled chicken salad and it was perfect on it. I followed the recipe exactly. I try to make all of my salad dressings as the store bought ones have so many preservatives and chemicals and I find home made dressings much lighter and definitely better for you. item not reviewed by moderator and published
Quick, Easy. I didn't have fresh lime so, used bottled juice instead; didn't have dry mustard (why I don't know---searched twice!) used Maille dijon. Very tasty. Not too sweet-just right. item not reviewed by moderator and published
