    Pretty good! This was my first time making latkes, so I'm glad I read the reviews beforehand. I'm not sure why the recipe doesn't mention squeezing the excess liquid from the potatoes, but I think that's a crucial step. Next time I try this I'll make the apple sauce too.

    This is the best recipe. I've been making them on an old-fashioned box grater for 50 years.I usually drain the liquid out just using paper towels or a dish towel.

    I too use this recipe and think it's great. I would also let the shredded potatoes sit in a colander over a bowl for a few minutes. The liquid will drain and can be discarded, but starch will settle at the bottom of the bowl and can be added back in with the potatoes to help them stick together. They're the best!

    I have been using this very latke recipe for over 10 years after my best friend shared it with me. I do think it is the best and my kids even love them cold! So I always triple the batch. The one thing missing on the recipe is that when you take the shredded potatoes from the processor you put them in a colander in your sink and put some weight on them and let sit for a half hour. The liquid drains out into the sink and you avoid wet latkes!
