    I just made this soup for the second time today. I used 3 potatoes instead of 2 - hoping it would be a bit thicker. It did, but it's still a bit thin for my preference. The next time I make it, I'm going to omit the water and see how the consistency is. Overall... it's an easy recipe, and a delicious soup!

    My husband who never had potato leek soup before said that it tasted like soup from a five star restaurant.I loved this recipe, very tasty. used store bought crutons. I used light cream and 3 potatoes, didnt add the parsley but it was still wonderful. I topped mine with crutons, bacon and parmessan cheese. Next time will use more bacon, as someone else said. Nice presentation texture. 5 Stars!

    I always love making soup and this one is definitely a favorite. I made my own croutons, which were wonderful, although I would suggest doubling the amount of croutons and bacon. It was a little thinner than I thought it would be but the flavor was still very good and that's an easy thing to fix. I will be making this again when the cooler months come back around.

    I like how easy this was to make and it tasted really good. The ingredients really shine in this one, especially the smoked paprika on the croutons. I have to agree with some other reviewers though, it does come out watery.

    TIPS: I suggest taking out at least a cup of water or omitting the water all together. I made it this summer but it was too hot to use the oven so I made the croutons in my toaster oven and they turned out perfect. Also, I had a bag of Trader Joe's frozen leeks on hand and it made it even easier. And darnit, no fresh parsley just the dried stuff and it served just fine.

    We liked it, it was easy to make for a week night, but I aggree with the a reviewer, I will add a few more potaoes next time.

    The soup came out very watery. I even double checked the recipe to see if I misread the amount of liquid. I used three smallish potatoes instead of two medium, so that wasn't it either. I wouldn't make it again.

    I've never made anything with leeks before but I love soup and wanted to give this a try. It was really easy and VERY good! I already had some store-bought croutons, so I didn't make the homemade ones in this recipe. I also used twice as much bacon and 3 potatoes just for personal preference. We will be adding this to our dinner rotation.

    I made this because I had an "elderly" leek in my fridge with no idea what to do with it. I made half a recipe due to only having one leek and I thought the soup was delightful. I admit I cheated and used store purchased focaccia croutons instead of making my own but would make this soup again and again. I too used only stock and not water (what's the point?. I also added red pepper flakes to give it a kick! YUM.

    My family really enjoyed this soup. I think it is a great recipe that you can truly make your own. I think next time I make it I will add more potatoes. That alone would thicken it...You can tweak it any way you like, but overall this is a very good hearty soup.

    I didn't understand why the 2c. of water was added either. Why not use more broth/stock? I thought that this soup was thin... I prefer mine thicker. Omitting the water and adding a few more potatoes probably would have helped. I also would prefer this with more leeks for flavor. After I made this and was disappointed in the consistency, I bought instant mashed potatoes to thicken it and it saved this batch. I loved the bacon and especially the homemade croutons!!! I made my croutons out of left over hotdog buns which added just the right amount of sweetness.
