For an easy post-barbecue treat, sandwich a scoop of softened praline or butter pecan ice cream and a spoonful of caramel sauce between chocolate wafers. Run a knife around the edge to smooth, then roll in chopped pecans, if desired. Wrap in plastic wrap and freeze until ready to serve.

They look absolutely YUMM! I can't wait to surprise my husband with this one. I'm visualizing a LARGE, CRISPY made from scratch cookie for the sandwich. Of course, the cookie will, of course, determine the flavor of ice cream i'll use. The possibilities are endless, here, and i'm dying to try it! How about a nice pistachio ice cream with melt in your mouth scratch shortbread cookies -- YUMM!
