This is a lovely recipe, so simple, yet delicious. I sliced everything paper thin in my new mandoline and that also made it beautiful. I didn't cook it as long, because the veggies were thinner....

Easy recipe and very good. I didn't think potatoes and squashes would go together so well. I used new red potatoes, sharp white cheddar cheese and dried thyme instead of yukons, machego cheese and rosemary as called for. Easy to double. A tasty, different side dish.

This was unbelievably fantastic. Didn't have yukon golds only russet, but piles of yellow crookneck and yellow zucchini and eggplant from my garden. Also didn't have Machego but a wonderful new york sharp white cheddar which worked perfectly. The rosemary was definitely the catalyst for making this such a flavorful dish!

Fabulous and oh so easy to use what I just happened to have on hand.! Didn't have zucchini, so used baby yellow crooknecks, didn't have Machego (though that would be my preference next time so used Fontina, used red potatoes. Fresh rosemary, which is not something I use regularly, is so divine and reminded me of meals in the south of France.

I have made this dish for 4 dinner parties and had multiple requests for the recipe each time. I added a small white eggplant suggested and it was delicious. The smell of the fresh rosemary filled the house. If you can't find the cheese(I found it at Costco a sharp cheddar or Swiss would work. Try this dish!

Made this exactly as directed. It was fabulous!!! Would certainly make again. Very easy. Used my food processor to slice the veggies, that way they were uniform in size.
