I have never done a pumpkin cookie before and came across this recipe. I must say that this was a very good recipe. For the people who say its to bland add a teaspoon of vanilla and opt out the spices for just two teaspoons of pumpkin spice makes a world of difference. These cookies were so good I'm kqking them for my sons his driver for Christmas and a few for myself.

I agree with those who have said this cookie is bland. I added extra pumpkin and spices, and still almost no flavor at all to the cookie itself. Cream cheese frosting with pecans sprinkled on top took them from being inedible to just "ok." If you're looking for pumpkin flavor, find another recipe!

The base of this recipe is really good. We love soft cake cookies so this was a great start. I added brown sugar instead of white, more spices all around and some almond extract to give it a little more flavor. I also increased baking time to 16ish minutes. They are very underdone at 10 minutes as the recipe suggests.

I thought these were the best Pumpkin Cookies I ever made! They are at an EASY Level which makes it fun to make! Love the Maple syrup ingredient instead of Brown sugar. I followed the RECIPE including the direction of only 1 cup of pumpkin etc. Only addition, I added a half a cup of pecans in the mix too! The cream cheese frosting makes the cookie even better! My daughter and her friends loved them! : yum!

Awful! Very bland. A total waste of ingredients.

I followed the advice of many when making these and used a whole can of pumpkin, that made the dough way too soft. I ended up baking the cookies for 15 minutes instead of 10, they were still too soft and ended up getting kind of rubbery.
After the first batch I added walnuts and chocolate chips and a lot more spices, these still didn't salvage the recipe. Not only are they not very pumpkiny tasting, they're a poor vehicle for other ingredients.

I followed the general recipe but made a few changes. I used a whole can of pumpkin, used brown sugar instead of white sugar and omit the syrup all together. I increased the nutmeg to 1/2 teaspoon and included 1/2 teaspoon of pumpkin spice. And do cook for 16-20 mins depending on size! These are very good holiday cookies. Traditionally speaking they are not cookies but cake like cookies. That's how they are suppose to be. I've never had a pumpkin spice cookie that wasn't cake like! Almost tastes like a pumpkin bread.

This is a good recipe to make mini cupcakes from or mini loaves and spread cream cheese frosting minus the lemon, try adding some nutmeg, allspice or pumpkin pie spice to the cream cheese frosting, it's great! Add any type of nuts but especially good with walnuts and add anytime of fruits you like that would go with pumpkin, raisins and cranberries are especially good. i am baking my second batch right now.

I liked how these cookies were soft but wasn't too impressed with the taste. However I did add some vanilla extract (1/2 teaspoon or so and it added a little more flavor.

These are great and easy cookies. After reading the reviews, I dumped a can of pumpkin in the mix. They turn out very soft and cake-like, but we prefer our cookies that way. I halved the frosting recipe and still ended up with too much. I actually preferred the cookies without frosting. At any rate, my husband took the left overs to work and they were gone within 10 minutes!

Delicious! I put candied pepitas on top of mine and it added a great crunchy texture. I did not add the lemon zest because I also thought it was completing too much with the pumpkin flavor. My only complaint is the cookie doesn't hold up well, it is almost like mini cakes - but they taste great!
