    This is definetly a keeper! The second time I made it I substituded Kale for the spinach and added cherry tomatoes at the end and in turned out awesome!

    I am very happy with how this turned out! I skipped the bell peppers and scallions because I didn't have them, and instead threw in some diced tomatoes. I also used a mix of water and vegetable broth for additional flavor. I agree with the other reviewers that cheese isn't necessary, and I think it to be an odd combination with quinoa. I topped mine off with some chopped parsley instead. This recipe was easy and as a meal it felt healthy, while also filling. Very flavorful too. A keeper for sure!

    I love quinoa and was excited to try this recipe -- it was delicious! I made it exactly how it was written and pan seared some shrimp to put on top. It was just the right amount of spiciness for me, not overdone. I agree with the review below, you can definitely get 5-6 servings especially if you add a topper. Can't wait to make it again!

    Excellent recipe and great way to get more quinoa in your diet if you're like me and not crazy about the flavor of quinoa. The richness of the other ingredients (especially tomato paste, beans helps to "disguise" the flavor of the quinoa and it's delicious! Agree that you don't really need the cheese. It's delicious without it. Regarding servings, my experience is if you're using this as a side dish, definitely more like 8 servings. If using as a main course, it's 4 servings and very filling. Don't need any sides. I made the recipe exactly as stated.

    This recipe was delicious! I didn't have green bell peppers so substituted chopped green chilies and then can't do dairy, so added some chopped cilantro. Will definitely make again!

    This is comfort food. Easy to make and tastes great. I didn't need to add any of the salt called for. This dish serves four but I would change that to eight.

    Love! I only had red and yellow peppers at home so I just used them. I also combined black eyed peas with black beans and increased the garlic to 3 cloves. No cheese was needed at all! So nummy!

    I used fresh black eyed peas, cooked them in chicken broth with a bay leaf and a dash of cumin and used chicken broth instead of water in the recipe and added a dash of cumin. Yum!
