Make the crust: Preheat the oven to 350 degrees F. Mix the cookie crumbs, melted butter, sugar and salt in a bowl. Press into the bottom and 1 inch up the sides of a 9-inch springform pan. Put the pan on a baking sheet and bake until set, about 10 minutes. Let cool completely.

Make the filling: Reduce the oven temperature to 325 degrees F. Beat the cream cheese, sugar, lemon juice and vanilla in a stand mixer fitted with the paddle attachment until smooth, 4 to 5 minutes. Add the flour, then beat in the eggs one at a time. Transfer 2 cups batter to a bowl; stir in the cocoa powder and food coloring. Pour the red batter into the crust, then pour the white batter on top. Using a spoon, pull some of the red batter up from the bottom of the cake and swirl. Bake until the edges are set but the center is still wobbly, about 1 hour, 20 minutes.

Turn off the oven but keep the cake inside to cool, 20 minutes. Run a knife around the edge of the pan (don't remove the springform side), then transfer to a rack to cool. Refrigerate at least 4 hours before slicing.

    It turned out great and easy to make. I am making it for Easter this year as a desert.
    Nabisco makes chocolate wafers which can be found in the cookie aisle. If your local grocer does not carry them, ask....it's a lot better than having to scrape the filling from the Oreo cookies. Chocolate graham crackers work well in a pinch, too, as suggested by several of your readers!
    I could not find chocolate wafers so I decided to use graham crackers, turned out so creamy and the crust was amazing!
    OMG!!! This was my first attempt to make a cheesecake and it was AWSOME!!!! I followed the receipe except I used graham crackers for the crust because its all I had in the house.....As per instructions from a baker I know - I put the cream cheese out for about 2 hours so it was room temperture (If you take a rolling pin and flatten the cream cheese it will get to room temp faster-this works great to get butter to room temp too for those who make homemade cookies...I was also instructed by my friend to get eggs to room temp also-(I put them in a bowl of warm water which I changed a few times...I have a new convection bake oven which I baked it in. I was worried as it was baking because 3/4 way into baking the top got somewhat brown and it was cracked alot.....The worry was for nothing, lol, it tasted soooooo Good.....I left it in the fridge for about 4 hours then put in the freezer for about 40 minutes before I tasted.. Try this receipe, you will not be sorry:
    I added a little bit of vinegar to the red velvet batter to accent that red color, baked it in a water bath and my family loved it! It is so rich and creamy, and full of flavor. For sure, this is going to be at the dessert table this holiday :
    It was relatively easy for me and I don't bake. : My daughters and I did this recipe the night before Thanksgiving and it was a huge success! I couldn't find the chocolate wafers and used the Vanilla wafers instead. Will definitely make this again....
    My oldest son loves Red Velvet Cakes and cheesecakes. I made this for his birthday./Thanksgiving.. Everyone loved it! The recipe was easy to follow. I couldn't find chocolate wafers but used Oreo cookies instead, split them in half and scraped off the cream filling, perfect. It looked very pretty when cut. I'll be making another one in the next few days to take to co-workers.
    I used the water bath for mine, like suggested below by another person. Also, since I couldn't fine either the wafer cookies or the chocolate graham crackers I substituted the chocolate plain animal cookies. Worked like a charm!
    To avoid cracks in cheesecake bake in a hot water bath, also the chocolate cookie wafers are not the ones that come in strawberry, choc. etc. with cream in between but plain chocolate wafers. You can substitute chocolate graham crackers which is a recently new product from Honey Maid. Those are the changes I made and the cake came out great! I bake cheesecakes for a living and those are my suggestions!
    Why are the chocolate wafers so hard to find? What about Teddy Grahams in Chocolate? It is the number one problem that all of these comments had. I do not know what kind of wafers they are referring to. Since it is so hard to find, am wondering if it was suppose to come from a specialty store?. There are some good substitute ideas in here.. no one semed to have a problem with the substitutes. Just wondering where they could be found.Everything else seems to be on a go.. just wondering..
    WOW is this a great recipe. We often have cake failures regardless of ingredients or kitchen specific environment situations, but this one came out perfect twice in a row. That makes it a super winner in this abode. This freezes great! Its just the two of us so a whole cake or pie is a bit much so freezing is a must for us. Love the little trick of holding back part of the mix before going *velvet*. Makes such a beautiful presentation. Thanks for the recipe.
    Sooo easy to make! Smells divine when it comes out of the oven! I could hardly wait to cut into it.
    This was my first ever cheesecake that was really edible. Easy! I read the directions to a T (except one changeand everybody enjoyed it. Yes our local Wal-mart did not have choc wafers so I used strawberry wafer.
    wonderful idea.. but I do not know why the chocolate wafers are so hard to find.. just too much trouble to get the Oreo cookie and take the creme out. All the substitutes for these wafers lets you know that substitutes are ok of any kind..I'm not going to worry about it any longer. Can't see anything wrong with vanilla wafers anyway. I suppose you could use just about any cookie wafer. BUT, with the Oreo cookies being so good, it might be worth the trouble it takes to do this step..
    Excellent! Perfect texture and taste : perfect for Valentines Day and beautiful presentation. I used chocolate graham crackers and lessened the amount of sugar a little bit. To lessen the fat content of the cake just a bit I used 16 oz of lower fat cream cheese in addition to 16oz organic regular cream cheese... mmmmmm. I added extra red food coloring and it still looked pink rather than red and my cake also cracked at the top, but still delicious!
    I had a hard time finding the chocolate wafers & think I ended up with the wrong product. The only thing I could find were the rectangular ones that also come in vanilla & strawberry. They have a sweet filling so the crust ended up super sweet once the sugar was added. I used 28 of the wafers but there seemed to be way too many crumbs which meant too thick of a crust. The cake looked very nice although it did crack. It was easy to make and the taste and texture were fine. This recipe is definitely worth another try.
    Very easy, but had trouble finding the cookie crumbs. Apparently our local grocers only stock them during 'holidays', so I bought two Oreo pre-made pie crusts, crumbled them in the bottom of my springform pan, and molded my own crust. Worked great, and cheesecake turned out beautiful, though cracked. Paired with some nice port. Husband, myself, and two adult sons thought it was perfect!
    I have made many cheesecakes over the years and this was one of the best tasting ever. It looks great too. I used 1/3 less fat cream cheese and used chocolate graham crackers for the crust. It was very creamy and delicious.
    This cheesecake was delicious! We bought a premade crust and there was way too much filling for it. It was alright though; we just ate the extra! (:
