I made these whoopie pies at the suggestion (begging of my boyfriend and absolutely loved the cookie part. The filling left more to be desired and we thought that I could do better. I ended up filling them with a cinnamon frosting that made these whoopie pies to die for! All in all, we loved the cookie and couldn't be happier that we discovered this recipe.

I just made these for my annual Christmas 'cookies' and they turned out wonderfully.
Things you need to take into consideration:
1. Sift the flour so it can better absorb the liquids. I sifted it at least 8 times.
2. Follow the instructions and do everything in order. Taking shortcuts (i.e. throwing everything together in one bowl to save time means your pies may not turn out as expected.
3. Consider using food coloring gel instead of liquid...it's highly concentrated and doesn't taste as metallic as the grocery store stuff.
4. Let your eggs get to room temperature before using...it creates a well emulsified cake batter so you have nice fluffy, well formed 'pies.'
5. If storing in the refrigerator use an air-tight container like Tupperware so you don't dry out the cakes.

I just finished making these bad boys! Absolutely delicious! Only, I didn't make them as pies, but simply as iced cookies. I also changed the the icing. I unfortunately did not have any cream cheese sitting in the fridge, so I took out a tub of Betty Crocker's fluffy white icing--I fluffed it up some more and added a tint of almond flavoring to it. Ah-may-zing! Brought some to my neighbour, she says these are her new favorite cookies! My family loves them too!

Just a little secret. For genuine red velvet you must shift your dry ingredients at least 12 times. I know that sounds kind of time consuming, but to get the velvety texture it is very necessary.

OK, if you think these were hard, stop reviewing recipes on this site and stick with Hamburger Helper. They are very straight forward, and taste great. They are not cookies, and they are not red velvet cake. They are red velvet style whoopie pies, which are a cakey-cookie. And for that, they are great, a nice variation on a super original and very creative regional cookie that is catching on in popularity around the country. If you like something different, give these a try. They got enthusiastic thumbs-up from my entire family!

I literally just finished baking these Red Velvet Whoopie pies and unfortunately, I'm very disappointed by the final result. The cookies are not sweet at all. If I hadn't baked them myself, I would have thought that someone forgot to add the sugar. It's impossible to conceive that these whoopie pies have a cup of sugar in them. Thankfully, if you put a lot of the frosting on the whoopie pies, it helps make them tolerable. I think this recipe could end up being good if more sugar was added to the batter, but I'm not willing to try it. It was a lot of work.

i would like the frosting recipe that you used on tv i use to heve this and i had lost it and when you made it on tv i was so excided but when i went to get it on line it was not the same could i please have the one you used on tv thank you robin gregg

These were such fun to make and a big hit with all ages! The only change I will make is to reduce the cooking time by a minute of two. They need to be soft but still firm enough to not fall apart under the filling. Someone called them CRAZY GOOD! I'd love to make them again.

it wasn't hard to make. im not a great baker & it wasn't bad for my 1st time. the cake was a little dry for me. im sure it will be better next time.
