I was really excited about this recipe but apparently somewhere I went wrong because the cookies came out --- not very good. They were a cross between a cookie & a cake but just didn't taste very good. My cream came out excellent, however.

I'll keep practicing and will hopefully master it one day so I can actually enjoy it.

These whimsical whoopies are GREAT! Whoever designed the recipe is a genius: they are a wonderful cross between a cookie and a cake. I have made red velvet cake for years and these are such a fun take on the traditional dessert! Don't listen to the nay-sayers in these reviews! They are easy and DELISH!! My dessert-loving family couldn't get enough!

Every time I've ever made red velvet cake, it's been dry so I expected that when I made these. But since they're more a cookie than pie, I think it's a great variation and the somewhat dry cookie works. They're delicious and my son loved helping me with these!

I do a lot of cookie baking, and these were amazing!!! The people that complained obviously don't know what they're doing. I also used vanilla extract instead of the beans-and the filling was delicious-just the right combination of tart and sweet with a luxurious texture. The batter was thick, but not unworkable. Whoever said the cakes were dry-overcooked them!
All in all I would make these again and again-my family inhaled them!

These adorable and tasty whoopie pies were a smash hit for my nephew's 15th birthday celebration. I did not personally enjoy all the "whisking" of the batter. So I decided to check the reviews...so glad I did. I followed the tip to replace vanilla bean with 1/4 t vanilla and the icing turned out delicious. I used light cream cheese with no problem. I wish I'd seen the note to use the electric mixer before I made the batter! The uniqueness of the red velvet whoopie pie adds a bit of whimsy to the occasion!

Eh the cakes were ok, came out kind of dry and weren't as amazing as I had hoped. I made the exactly as it said except I tried to substitute fat free cream cheese for the middle and that does NOT work. It was really runny so I had to add some butter to thicken it and the filling turned out perfect eventually but still the cakes were kind of blah.

Made these for Gourmet Poker night, Feb 13th ! Everyone loved the not so heavy chocolate flavor and the cream cheese frosting was perfectly sour/sweet.

I really liked the whoopie cookies, as did my famiy members. They were very easy to make as you did not have to use a mixer. Mixing was all by hand. They baked in 9 minutes. The next time though, I would not use the cream cheese icing, I would use a butter cream. You can stretch this recipe by not making a sandwich just frost individual cookies.

I don't normally bake and these came out amazing! Everyone loved them and they were a huge hit overall : I actually substituted the vanilla bean seeds for 1/4 tsp of vanilla and the icing came out delicious. I also added a couple drops of the red food coloring to the icing to make it pink for VDAY. GREAT RECIPE OVER ALL and super fun to eat!
