I made this for dinner last night and everyone raved over it. I don't cook pork very often because I find it to be dry, but this was really moist and flavorful.
Also the veggies and pan sauce were yummy! A perfect compliment to the pork. Definitely a keeper.

The recipe was very good. For my taste I would add a little less mustard to the sauce. I cut the apples too small and they disapeared!
I would try it abgain, soon.

This was an outstanding dish, and not difficult to make. The mustard sauce was an extra bonus on the pork, which was extremely tender. The veggies had a fantastic flavor, will make again for sure!

The flavors in this recipe were good but I found the cooking time for the pork loin to be totally inadequate (and my over tends to cook consistently with recipe requirements. The roast needed and additional 20 minutes beyond the 35 minutes recommended.

Tried this recipe but didn't have celery so I added potatoes to vegtable mixture. My husband who is ill and very picky enjoyed the dish. I will definately use again.
