This is a favorite of mine. I bake my beets closed up in foil rather than on a baking sheet. This keeps them nice and tender without getting overdone. I love that it's good cold, too!

This was easy and delicious. Just be careful with the beets, they stain everything, including wood cutting boards

Made this with golden beets and it was phenomenal! The golden color of the beets is beautiful. Everyone tried it and loved it because they didn't know they were eating beets!
