Excellent. I did add minced garlic. Made it last week and the next day I used some as a sauce over butternut squash ravioli's. Am making a double batch today to give to family.

Easy to make - excellent recipe to use leftover roasted red peppers and sundried tomatoes as others mention. I loved the cilantro and pepper jack with the soup. Will definitely make this again.

Loved it. Loved using the potatoes instead of cream. Great way to use up a jar of roasted reds sitting in my fridge, i'd make it again.

Surprisingly rich and satisfying considering that it really has less than one cup of dairy in the whole recipe. We had leftovers today with grilled pepper-jack cheese sandwiches on sourdough. Perfect!
