This dish was awesome but I found it to be a little dry. It could have been a mistake on my part but I will definately be making it again.

Oh man, oh man. I use SO much olive oil in this with extra garlic and extra cauliflower. Never tasted roasted cauliflower before - used to hate cauliflower except fried. Now I'm ready to grow cauliflower in my garden because It's so delicious. Just divine! I could seriously eat this every day. I WOULD eat it every day if it wouldn't make me gain weight and if I didn't think my husband might get tired of it. LOVE. LOVE. LOVE.

Fabulous this dish is killer just as written. You can add your own variations and it is still great. The cauliflower is better the more you caramelize it whether by in the skillet or roasting in the oven. My husband doesn't like cauliflower but he loved it and said he could eat this every night.

After reading suggestions to use pepper flakes I used hot sausage instead of sweet sausage and pepper flakes. I also used 1/2 cup Pinot Grigio wine instead of the 1 cup pasta water to cook the cauliflower and meat mixture. I used minced garlic instead of sliced garlic and I added baby bella mushrooms. My husband said he could eat this every day and he doesn't like pasta. One of the best flavored pasta dish I've made! Yummy!!!!

I want to thank everyone who posted the great suggestions. Too many "reviews" provide little or nothing by way of information. In this case, the FN dot com chefs have provided a great template for a mid-week meal for sausage and cauliflower lovers. Here is my suggestion: bake the cauliflower first! I like the florets with a little color on them and this does it for me. Enjoy!

Very good. I added some baby spinach that needed to be used up and some red pepper flakes. But the nutritional numbers in the recipe were a little shocking - 700+ calories and 31 grams of fat?? That seems a little ridiculous for something that should be fairly healthy.

Loved this! My boyfriend hates veggies, but he actually like the cauliflower in this dish - score! I browned/cooked the sausage separately and made 2 dishes: 1 with the sausage and 1 vegetarian (for me. It was easy to do and not at all complicated. Oh, and I added mushrooms to mine and it was fabulous!

We liked this a lot. Next time I would use more cauliflower. Used penne rather than spaghetti (it's what I had and per other reviewers' suggestions added a can of diced tomatoes and some red pepper flakes.
