This was a good recipe for those who like a little spice and zing in their meals. I loved it but my "ginuea pig" family thought the ginger was a bit too overpowering.

I needed a recipe for a hot day when I didn't feel like eating anything rich. The ginger, mint and basil was an excellent way to make a piece of chicken refreshing!

I ended up spooning the mixture over the chicken and finishing them in the oven so that the sauce cooked in and made it juicy. Served it with some peas mashed with mint, butter, and shallots. Very good and refreshing
