I made Pad Thai all the time since I am from Bangkok, Thailand. It's easy, tasty and yes, healthy! It's one of my fevorit one dish meals! I have not tried this recipe yet but by looking at the ingredients, I can tell that it will make very good Pad Thai. I put both the eggs and the tofu in mine. I leave out the chopped peanuts until last, just spinkle it on the serving plate so the peanuts will stay crunchy and fresh along with the cilantro leaves and sliced red bell pepper for color. I'll have a small bowl of chopped peanuts and Thai hot sauce along side for those who like more heat and crunchy peanuts taste. Enjoy!

I loved it! It makes quite a bit. It states 4 servings, but I think it is more like 8.
I love the idea of the other poster using eggs instead of tofu, but I thought that the tofu was great.

I've made this 3 times now and I just love it! (Made it twice this week, actually! However, I add my own little twist to it. First, I'd go a little easy on the hot sauce...powerful stuff if you're not used to it. I don't mind sweating a little, but my kids would freak. Secondly, Jack is allergic to peanuts so I add a couple of teaspoons of toasted sesame oil to the sauce (but I still add peanuts to mine! Also, I rarely have tofu on hand so I add a couple of eggs w/ the garlic. Last, I love a little cilantro on top which is authentic. I think this is a great recipe that uses ingredients you can find anywhere.

My mother isn't very adventurous when it comes to dinner foods. I convinced her to try the pad thai (despite the fact that fish sauce makes her toes curl and she LOVED it. She even brought some over to my grandma's house for her to try how tasty it was. YUM yum yum!
