DELI and it only takes a few minutes, I love tomatoes and basil so I tripled both, reduce olive oil in half, and a super light meal.

Simple ingredients, so easy and so flavorful! A real restaurant quality meal, it will be a new company dish! I heated the tomato mixture with the cooked shrimp and served it over cheese tortellini. Absolutely delicious!

Who would have thought that a little garlic, salt, pepper and olive oil would be enough to pack so much flavor into shrimp?!?! The great thing about this dish is that the ingredients are very basic. The prep time was longer than stated since I removed all the shells myself and chopped everything by hand. The shrimp portion was fast, easy and done in a matter of minutes. After the shrimp was cooked to perfection, I poured the tomato mixture into the pan. Everything was then tossed together immediately before serving and garnished with some basil leaves. It has such a colorful presentation. Served with corn on the cob and a baked potato it became a pleasantly satisfying meal. The leftovers were great on a bed of field greens with a balsamic vinagrette.

I was surprised with reviews stating that the shrimp was bland. I could not figure out how that was possible since I tasted it even before adding the tomato mixture. The next time around (since I love garlic... I will add a few more cloves along with green onion, for that an extra burst of flavor.

As a novice at cooking, I highly recommend this recipe!

This recipe is easy and delicious. I served it cold and instead of mincing the garlic, I left several in whole to give it the garlic flavor. I highly recommend it. This is a very attractive looking dish with the green and red colors.
