This was great! Our chickens lay more eggs than we can eat so we are always looking for different recipes to use them in. I added 4 slices of crumbled bacon and I sauteed some leeks with the green onion. I wished my egg yolks weren't hard, but next time I will do less time. Thanks for the great healthy dinner!

This dish has amazing flavors, it very easy and really healthy. I do recommend rinsing the squash/zucchini mix after salting, it's so easy to over-salt!

Very tasty and versatile. I switched a few ingredients to make this a southwestern skillet. I used cilantro instead of parsley, cumin and a touch of chili powder instead of the nutmeg.
The dangers: VERY easy to over-salt, especially since you have to salt-dry the squash. Also, the full 20 minutes was a long time for the egg, but 15 minutes left the veggies a little lacking. I would increase to the full 20 minute time frame and add the eggs at about the 5 minute in mark.

Excellent dish. The eggs were a bit runny for me at the cook time, so I put it back in for a little bit and I overcooked them. Becareful. I had no yolk. Still wonderful. I will make this again.

What great way to use up squash - I have tried a lot of recipes for zucchini, and this one is definitely a keeper. Even picky hubby liked it. I love breaking the yolk and letting it run down onto the food. Big yum!

Delicious! A nice change too the typical brunch menu. I did not have scallions, so I shredded a half an onion and used that in it's place. Definitely a keeper.

I have a lot of zucchini in my garden right now, and this was a great, out-of-the-box way to use some. I served it with some chorizo, and that was an excellent pairing. My husband -- more meat and potato than veggies and eggs -- couldn't stop saying how good it was. I will definitely make this again!

Real yummy. I had a turkey leg with it, late night snack, cool way to cook ordinary eggs. Planning on making it again but as a side dish..I like it. real real good.

this was good. but it ended up too salty for me. I will cut down on the salt next time. Also, the eggs took so long to set, that next time I will just fry the eggs. I made it with pepperjack. I could see this being still great as a side dish without the eggs or cheese.

made it for dinner tonight and loved it!! We served it with maple bacon crumbled over and it was very tasty.
