As much as I love ginger, I'm glad I read the reviews. I decided to pull it out at the end. I used a little more ginger, but cut it thicker. I also added more cinnamon (personal preference. It was very good paired with the coconut ice cream.

it was good. i didnt care to eat the sliced ginger, next time i would have just left the ginger whole and took it out at the end like i did the cinnamon. i'd definitely recommend pairing it with ice cream. it made it better.

I knew that ginger can be pretty powerful,so when I read how much they suggested,was a little leery but figured that they knew what they were talking about so used it any way so that I followed the recipe.
Sorry but big mistake. By the time it was done,the whole thing tasted like very strong ginger that made the back of your throat hot. So yes,way too over powering.My mom and I love pineapple but after trying this couldn't bring ourselves to eat it any more and had to throw it out. It was a waste specially since we used real whole pineapple.Also the longer the pineapple sat,the more the ginger grew stronger in taste.

This is good as long as you cut the pineapple into bitesize chunks. The syrup that is left as a result of cooking everything down is wonderful over the coconut icecream!
