This chili is easy and healthy, but the flavor was so different the kids wouldn't eat it. Too bad for them - the leftovers were even better!

Great recipe! I really enjoyed the flavor of this chili. Loved the consistancy of it too, never got too runny.

I have to confess, I didn't really make this... my husband did. He altered the recipe a little in that he didn't have tapioca (or couldn't find it and used regular pudding!! Crazy, but it worked. We also didn't have course ground, so the consistancy was a bit off from that as well. But the flavor was absolutely spot on. The combo of sweet and spicy was delicious. Will make again... with tapioca and a courser grind of chicken to give the chili some volume. We didn't add the beer either and next time I'll give that a whirl. Definitely will keep this one in the rotation.
